Yield Based Scaling
  • To enable Yield Based Scaling you need to have entered a final yield for the ingredient based on the original specification.

    For example, if you made Sugar Syrup with 2kg Sugar and 1kg Water, your Yield might be 2.3L
  • Vac pack ingredients and infuse in water bath for 1 hour at 60º
  • Remove while warm, and balance into centrifuge buckets
  • Spin at -10º for 1 hour 30 mins
  • Freeze buckets over night at -23º
  • Pour liquid off and batch drink
  • Once batched spin final drink again at 20º for 20 mins
