  • 2ml Pectinase £nan

Steps
  • Blend in batches with water in Thermomix along with 2.5ml pectinase for 5 minutes at speed 7
  • Pour liquid into large jug
  • Take 4 large centrifuge bucket and measure the liquid to distribute evenly
  • Spin at 4000rpm for twenty minutes
  • Pour off clarified juice and strain through muslin
  • Add liquid to thermomix along with 1:1 sugar
  • Blend at speed 3 at room temperature until the sugar has dissolved
  • Strain and bottle
