Clarified Banana Syrup

- 1000g Caster Sugar £nan
- 2ml Pectinase £nan

Steps
- Blend in batches with water in Thermomix along with 2.5ml pectinase for 5 minutes at speed 7
- Pour liquid into large jug
- Take 4 large centrifuge bucket and measure the liquid to distribute evenly
- Spin at 4000rpm for twenty minutes
- Pour off clarified juice and strain through muslin
- Add liquid to thermomix along with 1:1 sugar
- Blend at speed 3 at room temperature until the sugar has dissolved
- Strain and bottle
