  • 1  Add kiwi fruit and Pectinex to Thermomix
  • 2  Blend until smooth
  • 3  Combine with vodka and ensure blended
  • 4  Add 2L to Rotovap evaporation flask and setup machine
  • 5  Set water bath to 35ºC and start distillation
  • 6  Distill at no higher than 55ºC until all liquid collected

  • 1  Blend Kiwis to a puree in thermomix
  • 2  Add puree to a large fermenting vessel
  • 3  Ferment kiwi without additional yeast
  • 4  Once 10 days have passed check airlock for bubbling
  • 5  After 2 days pass with no airlock bubbling clarity ferment
  • 6  Spin ferment in the centrifuge to clarify
  • 7  Add acid and stir to dissolve
  • 8  Add sugar and stir to dissolve
  • 9  
  • 10  If the ferment is very bready, then clarify fresh kiwi in the centrifuge and cut ferment equal parts

  • 2  Set thermo to 50º, timer for 10 mins, and stir at speed 4 for 30 seconds
