  • 1  Blend in batches with water in Thermomix along with 2.5ml pectinase for 5 minutes at speed 7
  • 2  Pour liquid into large jug
  • 3  Take 4 large centrifuge bucket and measure the liquid to distribute evenly
  • 4  Spin at 4000rpm for twenty minutes
  • 5  Pour off clarified juice and strain through muslin
  • 6  Add liquid to thermomix along with 1:1 sugar
  • 7  Blend at speed 3 at room temperature until the sugar has dissolved
  • 8  Strain and bottle

  • Instructions
  • 1  Add all ingredients to vac bad and seal with maximum pressure the bag will take without leaking, except water
  • 2  Infuse overnight
  • 3  Chinois mixture pushing out as much of the liquid as possible from the hops
  • 4  Add liquid to the large evaporation flask with 2ml anti foam
  • 5  Set rotavap water bath to 60 degrees
  • 6  Evaporate all liquid slowing bring the mbar down to around 40
  • 7  Collect liquid and measure abv - add water to bring abv down to 40%
