  • 63g Citric Acid
  • Instructions
  • 1  Clarify raspberries in centrifuge
  • 2  Add sugar and stir to dissolve
  • 3  Add acid and stir to dissolve

  • 1000g Caster Sugar
  • 2ml Pectinase
  • Instructions
  • 1  Blend in batches with water in Thermomix along with 2.5ml pectinase for 5 minutes at speed 7
  • 2  Pour liquid into large jug
  • 3  Take 4 large centrifuge bucket and measure the liquid to distribute evenly
  • 4  Spin at 4000rpm for twenty minutes
  • 5  Pour off clarified juice and strain through muslin
  • 6  Add liquid to thermomix along with 1:1 sugar
  • 7  Blend at speed 3 at room temperature until the sugar has dissolved
  • 8  Strain and bottle

  • Instructions
  • 1  Blend the leaves to a powder
  • 2  Combine and leave to infuse for 24 hours
  • 3  Coffee filter and store in the fridge
